I bumped into this recipe a few days/weeks (I can’t really remember) ago through Pinterest. Once I repined it, I knew I had to make this at some point. And that point was this past weekend.
This is the meringue, after baking it for 350 degrees for 45 minutes. This is the base for the pie, in lieu of a pie crust.
This is the lemon custard, before adding the whipped cream.
And this is the whipped cream. Whipped from scratch with a little confectioners sugar added to gain some sweetness.
This is what the final custard looks like, once you fold in 1/2 cup of the whipped cream to the original custard.
And then, after everything has properly cooled off, you pour the custard on top of the baked meringue.
And then you add the rest of the whipped cream on top of that.
The finished product is delicious, and since it’s served cold, great for summer.
Easy to make and delicious!
