Torta de Zanahoria

So what’s a girl to do a gray, lazy, drizzling Friday afternoon? Bake! And a Torta de Zanahoria was way overdue. So after a chiropractor appointment, a visit to the bank, (by the way did you know that saving accounts are only giving around o.25% of APR!!!??? Talk about getting nothing for your money! A CD is a slightly better deal with 2% APR, anyway) and a bikini wax (double ouch!), baking was the next thing on the list.

For the ingredients, I have:
3 Cups of Carrots
2 Cups of Flower
1 Cup of Sugar
1 Cup of Oil
2 TSP of Cinnamon
1/2 TSP of Baking Powder
1/2 TSP of Baking Soda
1/2 TSP of Vanilla Extract
3 Eggs
A pinch of Salt
(I added a little bit of milk just to make it a bit moister, but that’s not in the recipe)

The ingredients are ready to roll!


I start off with these


Turning them into 3 Cups


With one of these.
Brownie points for those who can make less of a mess than I did ; )


Then mix up all the ingredients and voila, you get something like this


Off to the oven at 350 F for 30 minutes, and then 20 more minutes at 200F

Well, at least that’s what the recipe says, which having no shame,
I apparently stole from my mom’s recipe box, see?


Then the frosting, yay!

The ingredients: 1 Cream Cheese, a TSP of Vanilla Extract, and 1 Cup of Confectioners Sugar, but if you are anything like me (all about the frosting) you’ll double that,
just in case you need a little more


When mixing everything in you get something yumisimo like this


Which you spread on the Torta de Zanahoria after it has cooled


And listo! Enjoy!!!
